Method
Preparing Pears
- Peel pears, leaving stems intact.
- Slice small piece off bottom so they stand upright.
Making Poaching Liquid
- Combine in large pot:
- - Water
- - Coconut sugar
- - All spices
- - Orange zest
- Bring to boil, reduce to simmer.
Poaching
- Add pears to liquid.
- Simmer 20-25 minutes until:
- - Pears are tender
- - Easily pierced with knife
- - But still hold shape
- Remove pears.
- Reduce liquid by half for sauce.
Serving
- Stand pear upright on plate.
- Drizzle with reduced sauce.
- Add dollop of coconut yogurt.
- Garnish with mint and pistachios.
