Preparing Tapenade
- Rinse olives and capers well.
- Place in food processor:
- - Olives
- - Capers
- - Herbs
- - Garlic (if using)
- Pulse until roughly chopped.
- Add:
- - Olive oil
- - Lemon juice
- - Black pepper
- Pulse until desired consistency:
- - Should be chunky, not smooth
- - Still have texture
- - Not fully pureed
Resting
- Transfer to serving bowl.
- Let rest 1 hour at room temperature.
- Flavors will develop and meld.
Serving
- Drizzle with extra olive oil.
- Serve with prepared vegetables.
- Can be spread on cucumber rounds.
