Dark Chocolate Avocado Mousse

A creamy, indulgent, gut-friendly
holiday dessert with low sugar and
healthy fats.

Ingredients
  

For the Mousse
  • - 2 large ripe avocados peeled and pitted
  • - 1/2 cup unsweetened cocoa powder
  • - 1/4 cup maple syrup or adjust to taste
  • - 1/4 cup unsweetened almond milk or other gut-friendly milk
  • - 1 teaspoon pure vanilla extract
  • - Pinch of sea salt
Optional Toppings
  • - 2 tablespoons cacao nibs
  • - Shredded coconut
  • - 2 tablespoons chopped low-FODMAP nuts pecans, walnuts
  • - Shaved dark chocolate 70%+
  • - Fresh mint leaves
  • - Sea salt flakes

Method
 

Making the Mousse
  1. Place avocado flesh in a food processor or high-speed blender.
  2. Add cocoa powder, maple syrup, almond milk, vanilla extract, and pinch of salt.
  3. Blend until smooth and creamy
  4. Scrape down sides as needed
  5. Taste and adjust sweetness or cocoa intensity
  6. Spoon mousse into 8 small serving cups or ramekins.
Chilling and Serving
  1. Cover cups with plastic wrap. If you don’t want a skin to form on top the mousse, lay
  2. the plastic wrap directly on top the mousse.
  3. Chill in refrigerator at least 1 hour.
  4. Just before serving, sprinkle with desired toppings.
