Preparing Carrots
- Wash and peel carrots.
- Slice into even 1/4-inch rounds.
- Try to make all pieces a similar size.
Cooking
- Heat olive oil in large skillet over medium heat.
- Add ginger, cook 30 seconds.
- Add carrot coins in single layer:
- - Work in batches if needed
- - Don't overcrowd
- Cook 5 - 7 minutes per side until:
- - Golden brown
- - Tender but still firm
- - Slightly caramelized
- Add:
- - Honey
- - Cinnamon
- - Salt
- Toss to coat evenly.
Serving
- Arrange on serving platter.
- Garnish with mint leaves.
- Drizzle with extra honey.
- Sprinkle with sea salt flakes.
